This wanna-be frittata was inspired by an image on Bing Food & Drink.
The things you will need:
- 2 whole eggs
- 1 cup of spinach
- 2 small tomatoes
- half an onion (small)
- about a tablespoon of water (only if needed)
- salt and pepper to taste.
- A skillet, knife, fork, bowl, cutting board, cooking spray and a spatula.
First things first.
Cut up the onion, spinach and tomatoes and place in separate bowls.
Whisk the eggs and set aside.
Heat the skillet on the stove and spray with some cooking spray. Enough to keep everything from sticking/ burning.
Add the onions and cook them for about 2 minutes or until translucent.
Add the tomatoes and let the juices run clear then stir in the spinach until wilted. By this time you should check to see if the juices from the tomatoes are enough so your food doesn't burn. If so, add a small amount of water.

Add the eggs, salt and pepper and gently fold in the spinach.
Now mind you, this was supposed to be a frittata, but my spatula didn't want to cooperate.. so it turned out to be a scrambled egg.
Enjoy with bread or toast to your liking.
